Tribute to Shokunin

Shokunin is based in Rotterdam and founded by Jelle van Rossum. He started his (Shokunin) craftmanship in 2018.

I met Jelle for the first time around 2019, it was at a cupping hosted by Tigershark. He explained four different (testing/ pilot) fermentations of the Argote farm. The flavours where amazing and the stories behind the Argote farm where inspiring. We finished the cupping with a livestream with the farmer Juan Pablo Argote. The explanation about their collaboration has changed my view on trading coffee & my way of consuming coffee. Juan Pablo is a valued supplier of our right (3th) grinder!

This Tribute Session will be about consumer-based roasting, one of the core principles of Shokunin. Jelle will share insights on how he adapts roast profiles to certain brew methods or even recipes. This will lift the veil that’s often draped around coffee roasting, and it will provide you with valuable techniques to brew better coffee at home.
